The Hosteria "da Fermento" was born in Piazza delle Vettovaglie, one of the oldest and best known in the historic center of Pisa and despite having suffered over the centuries numerous interventions and renovations, it has never changed its original function which, as the name denotes, has always been used for trade. The name "Fermento" derives from the nickname given to the little pest Rachele, daughter of the owner, so nicknamed by her grandfather for her state of agitation and her vitality! Thanks to a late 2013 renovation of the old Vettovaglie Cafeteria, the inn is elegant and welcoming, with its vast cellar of Tuscan wines and wines from the Pisan hills and with a rich menu of local culinary tradition. Always open for lunch on public holidays and every evening for dinner for excellent quality food and wine tours. It also has outdoor tables on the square. Closing day Wednesday.

We are constantly looking for quality in the choice of raw materials, 0 km products, IGP and DOC. On the menu you will find the excellence of our territory and recipes from the Pisan Tuscan tradition. The menu evolves and transforms with new dishes of the day, some classics others new and creative. The kitchen is understood as a journey that connects our past and traditional dishes with new tastes, which give space to innovation and creativity. Ours is an authentic passion and care for every single ingredient to give the raw material its maximum expression. The proposals of our cuisine vary according to the seasons, to enhance the natural course of each single ingredient. We offer homemade bread, pasta and desserts and our specialty is meat, especially Chianina beef, excellent steaks, cut steaks, fillets and Florentine steaks.
